    The market for catering out of restaurants continues to look good going into 2014. At Monkeymedia Software and the Catering Institute, we are always looking at how the market is moving.

    I found some interesting commercials/ads for catering from some of our restaurant community’s most trusted brands. As we can see, catering continues to move towards becoming part of the overall brand strategy for our restaurants.

    I am so excited about the restaurant catering rewards & loyalty program we are working on with the fantastic team at Punchh!

    What I love most about the work I get to do at MonkeyMedia Software and the MMS Catering Institute is the innovation.  We are always working on new things.

    The team at Punchh recently became “Restaurant Catering Certified” by my team at the MMS Catering Institute.  They took advantage of our vendor certification program which really allows us to align the business strategy of catering out of restaurants.  It also helps us to agree on a standard and language so that when we work on customers together, we say and do the right things.

    The program we are designing is going to be the first of its kind.  One that the industry has not seen before and one that is very thoughtful and specific to the restaurant catering transaction.

  • 5 ways to market your restaurant catering holiday program

    As we close out the year, let’s focus on how our restaurant community can ramp up catering sales during the holiday season. This is the time of year when your holiday catering-specific marketing materials become crucial to your fourth quarter catering sales performance. There is a direct correlation, but you have to make some noise.

    During this time of year especially, as a restaurant operator, you really need to zero in on your customers and why your catering products and services are different from those of your competitors. Remember, catering out of your restaurant(s) is a different business than your in-store operation and not just an “add-on” service. You must be specific and thoughtful. Focus in on your brand promise.

    In order to really drive incremental, higher-margin catering sales during the holiday season, you will need to develop marketing materials that are very visible to your in-store guests, as well as your store team members. Use existing real estate, people, and most important, your in-store customers by making it easy for them to make your catering business a success this season. There is a lot of money on the table within your existing customer base. They are all thinking about food options for their upcoming gatherings, and their options are plentiful. Your company should be the clear choice for them.

    Focus on feeding your customers where they live, work and play, such as holiday office parties, at-home gatherings or off-site holiday events. Zero in on how your products and services will help your community this season.

    Here are 5 ways you can focus your marketing efforts to capture holiday catering sales

    1. Tell your catering story. Your catering story can be told using all of your preferred advertising methods, designed to showcase your brand and team as THE catering experts. Share a list of all of the organizations using your catering services each and every day. Make that list visible to your current in-store customers and find an area in your store to post “today’s deliveries.” Make it a BIG sign…. Digital would be cool… This will drive customer inquiry and increased demand for your holiday catering needs. But don’t forget, you’d better have a solid catering expert in-house to help the customer.

    2. Develop and showcase your holiday catering menu. Your holiday menu should be different/complementary to your current catering menu. I’d recommend that you simply do “one holiday catering product or package” alongside your regular catering menu. Focus on a category. Just be clear that it is a limited time offer (LTO).

    3. Train your people to speak and write the language of restaurant catering. This is true whether you’re gearing up for holiday catering sales or looking to build momentum with your current program. The most valuable marketing tool available to you as a restaurant operator is your people. Train your people at the operations level to tell your catering story to the public. Your front-line people should be able to direct your catering customers to the right team of catering people within your organization at the right moment, where that catering team will ensure that your customer’s expectations are set properly for guaranteed service execution.

    4. Don’t discount and tell your customers why. Do not use discounting or couponing to incentivize your customer to use your catering services. There are just to many hidden costs behind the catering transaction to give away money while doing it. Just focus on doing a good job and your customers will always come back for more because catering is a stress driven transaction. If you do have to negotiate something to get the order, use your judgment based on the size of the order. Remind your customers why you don’t offer discounts on catering orders.

    5. Document holiday policies and procedures for your team and your customers. Assuming that you have a day-to-day catering and off-premise business strategy in place, the holiday season will place increased stress on your catering operations teams. Your catering strategy at holiday time should provide a logical plan for this seasonal spike in sales. Include provisions for additional hired holiday help and support. Align your holiday catering strategy with your existing plan and then be very specific with a separate policy and procedure guideline focused specifically on your holiday catering customer.

    The holidays should be remembered as a time of festivity with co-workers, friends and family. Give your catering customers an experience to remember and they’ll have even more to celebrate, as well as tell all their friends what a great catering experience you were able to provide.

  • Boost Restaurant Catering Sales with at Thoughtful Beverage Program

     

     

    Increase Catering Sales

     

    According to data from Beverage Marketing Corp, U.S. beverage production volume approached 29.8 billion gallons in 2012, an increase of 1 percent over previous years.  This data presents a strong argument that beverage consumption continues to rise in the US.  While catering out of restaurants is another market segment for your brand, there is now ample opportunity to successfully meet consumer demand for beverage options within your existing or developing catering program.

    At MonkeyMedia Software and the MMS Catering Institute, we speak regularly about how having a profitable menu mix is crucial for driving incremental catering sales in our restaurants. While our catering menus must focus on providing the best experience our brand can execute, I’d like to focus today’s discussion on the attributes that make up a great beverage platform for your restaurant’s catering program.

    Let’s imagine that you are about to cater a business breakfast for 15 people. A strong breakfast catering program must include coffee, tea, juice and water.  Depending on your brand, even if breakfast is not in your DNA, you will need to decide if you will offer a catering service for the morning.  Often, customers needing catering services throughout the day will call you for lunch and breakfast.  You will need to offer a beverage solution that works for both day parts.

     

    If you cannot manage hot coffee and tea, consider co-branding your morning service with a strong coffee brand to make sure your client does not go shopping elsewhere.   If you decide to pass on offering beverage solutions for the morning, then consider eliminating a morning catering program altogether. You just won’t be able to do a good job in that catering category without a hot beverage program.

     

    Now, as you continue down the beverage path, consider your packaging carefully as well as your flavor profile.  Often I see brands offering “consumer based” beverage products for the boardroom table.  While that may work in terms of offering an easy solution, I argue that offering consumer based beverages that are readily available in convenience and grocery stores might be a lost opportunity for maximizing your catering profits.  You see, consumers understand the market price for a can of soda, for example.  This makes it very difficult to sell a can of soda above market price.   This is important because with the dynamics of a catering transaction, we often have to manage the hidden costs of house accounts and distribution.  Therefore, we might have a hard time making sufficient profit margins on these products to ensure we have a healthy catering operation out of our restaurants.

     

    There are several ways to get around this commodity-based perception.  For one, create a proprietary beverage such as lemonade or iced tea that brewed in house and has the right label on it promoting your brand.  This will allow you to sell “by the gallon” for instance. Providing bulk beverages to clients looking to fulfill a specific need adds a level of differentiation to your brand and locks down your catering program as a turn-key service format.

     

    Of course, you might still need to offer canned sodas; however, your catering sales representatives will really need to explain to your customers why your prices are far above grocery and convenience store ones. This is so that your customers don’t feel sensitive to what they will need to pay in order to make it worthwhile for you.

     

    The full service offering of beverages such as coffee — complete with cups, stir sticks, cream and sugar — juice, iced tea and other beverages, provided to customers in a way that fits the need of their occasion and delivers on the catering experience, will win over many convenience-oriented customers for your catering operations.  Saying that, it is crucial that you differentiate your beverage program so that it is as unique as possible to your brand’s catering experience.  Anything less will result in a price war and a dilution of your brand’s catering experience.  You can easily lose a customer by overcharging them for a can of soda, for example.  Hardly worth the exercise.

     

    Don’t forget that marketing will play a strong role in communicating your food and beverage menu mix to your catering customers. In order to really drive higher-margin catering sales, your marketing team should make a lot of noise around it — both internally and externally. Make your catering packages — complete with proprietary beverage pairings — extremely visible to your in-store guests. Build awareness with your in-store customers while your sales teams build awareness with your corporate catering customers.

     

    Your catering sales teams will automatically know which beverages best pair with the occasion based orders they are taking on a daily basis and they will direct catering clients to the appropriate pairing that fits their needs.

     

    Your catering program should not be about anything else except creating a menu experience that your customers want in order to fill demand. Make a profitable and flavorful beverage solution a part of that experience and watch your customers come back for more services.  Keep it thoughtful and differentiate it from your in-store beverage program.
